Olive And Parmesan Bites

Ingredients

  • 2 cups all-purpose flour
  • 1 cup parmesan cheese, grated
  • 2 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 1 tablespoon fresh rosemary, chopped
  • 1 egg
  • 1 cup evaporated milk (carnation)
  • 1/4 cup canola oil or 1/4 cup vegetable oil
  • 1/3 cup olive, chopped
  • 1/2 cup grated parmesan cheese

Recipe

  • 1 preheat oven to 375°f grease mini muffin cups.
  • 2 combine first 5 ingredients in a medium sized bowl. stir well. in another bowl, whisk together egg, milk and oil. pour into dry ingredients and stir just until moist. add olives. stir to combine.
  • 3 spoon batter into prepared muffin tins. sprinkle with remaining 1/2 cup parmesan cheese. bake in preheated oven for 15 minutes, or until a toothpick inserted into center of muffin comes out clean.
