Marinated Summer Tomatoes

Ingredients

  • Servings: 4
  • 2 green peppers, sliced
  • 2 large tomatoes, ripe sliced
  • 1 large sweet onion, sliced very thin
  • 1 cup cider vinegar
  • 1/2 cup sugar
  • 1 cup olive oil or 1 cup canola oil
  • 1 tablespoon salt
  • 1 teaspoon celery seed

Recipe

  • 1 layer the peppers, tomatoes and onions in a large bowl, crock or similar container.
  • 2 combine remaining ingredients and pour over vegetables.
  • 3 refrigerate overnight.
  • 4 keeps very well for several days.
