Shrimp Jambalaya

Total Time: 55 mins Cook Time: 55 mins

Ingredients

  • Servings: 4
  • 1 tablespoon canola oil
  • 6 ounces andouille sausages, halved lengthwise and sliced into 1/4-inch pieces
  • 1 medium onion, diced
  • 1 green bell pepper, ribs and seeds removed, diced
  • 2 stalks celery, diced
  • 2 garlic cloves, minced
  • coarse salt and pepper
  • 2 teaspoons paprika
  • 8 plum tomatoes, seeded and chopped
  • 1 cup long-grain rice
  • 1 lb medium shrimp, peeled, deveined, and tails removed (about 30)
  • 1/2 cup scallion, thinly sliced for garnish

Recipe

  • 1 heat oil in a large skillet over medium-high heat. add sausage; cook, turning occasionally, until browned on all sides, 4-6 minutes. add onion, bell pepper, celery and garlic; season with salt and pepper. cook, stirring occasionally, until onion begins to soften, 5-6 minutes. stir in paprika, cook until fragrant, about 1 minute.
  • 2 add tomatoes, rice and 3 cups water to skillet; cover and simmer over medium heat until rice is cooked and has absorbed all the water, about 15 minutes.
  • 3 add shrimp to the skillet, and cook covered, until shrimp are opaque throughout, 3-4 minutes. remove from heat; season with salt and pepper as desired. serve hot, garnished with scallions.

Pancakes

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • 2 cups flour
  • 2 tablespoons sugar
  • 1 egg
  • 2 teaspoons baking powder
  • 1/8 teaspoon salt
  • 2 cups milk
  • 2 tablespoons vegetable oil or 2 tablespoons canola oil
  • blueberries or bananas or apples or chocolate chips

Recipe

  • 1 heat griddle/stovetop to 375 degrees fahrenheit.
  • 2 mix dry ingredients (flour, sugar, baking powder, and salt) in a medium-sized bowl.
  • 3 beat egg thoroughly.
  • 4 mix together egg and oil.
  • 5 add egg mixture to dry ingredients and mix thoroughly.
  • 6 add milk and mix until relatively smooth.
  • 7 add chocolate chips, blueberries, banana, and/or apple to batter, if so desired.
  • 8 scoop pancake batter onto griddle/pan (i like to use a 1/4 cup to scoop it, so i have a nice size.).
  • 9 put on a plate when inside is solid, serve warm. keep in a warm oven on a plate if not serving immediately.

Shrimp In Spicy Lime Sauce

Ingredients

  • Servings: 4
  • 1/2 cup lime juice (3 or 4 limes)
  • 1/4 cup sugar
  • 1 tablespoon salt (to taste)
  • 2 tablespoons canola oil or 2 tablespoons grapeseed oil
  • 1 teaspoon minced garlic
  • 1/2 teaspoon crushed red pepper flakes (to taste)
  • 1 1/2 lbs peeled shrimp or 3 lbs head-on unpeeled shrimp
  • minced cilantro (to garnish)

Recipe

  • 1 in a small bowl, combine the lime juice, sugar and salt. place oil in a 10- or 12-inch skillet, and turn the heat to high. a minute later, add the garlic and chili flakes and cook the garlic until it just begins to brown. immediately add the lime juice mixture all at once, and cook until it reduces by half, or even more, 3 to 5 minutes. there should be only about 1/4 cup of liquid in the skillet, and it should be syrupy.
  • 2 add the shrimp, and cook over high heat. the shrimp will give off liquid of their own and begin to turn pink almost immediately. after about 2 minutes, stir contents of pan. continue cooking, stirring occasionally until all the shrimp are pink, about 4 minutes total. taste, adjust seasoning, garnish with cilantro and serve with rice.

Tasty Chicken And Pumpkin Stew

Ingredients

  • Servings: 6
  • 10 g canola oil cooking spray
  • 1 onion, chopped
  • 1 garlic clove, chopped
  • 1/2 teaspoon chili flakes (or (to taste)
  • 2 teaspoons smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon cinnamon
  • 600 g chicken thighs, cut into bite-sized pieces
  • 1 granny smith apple, cut into cubes
  • 2 cups pumpkin, peeled and cubed
  • 1 1/2 cups no-salt-added chicken stock
  • 1/2 lemon juice or 1/2 lime juice

Recipe

  • 1 heat a spray of oil in a large non-stick frying pan over medium heat and cook onions and garlic until onion is soft but not browned. add the spices, stir to combine and cook for another couple of minutes.
  • 2 add the chicken, apple, pumpkin and stock and bring to the boil. turn the heat down and simmer, covered, for 15-20 minutes. remove lid and simmer for 10 minutes more or until sauce has reduced and thickened.
  • 3 squeeze in lemon or lime juice. serve with couscous or rice.

Chewy Lower-fat Brownies

Ingredients

  • 1 brownie mix, 13x9 pan size
  • 2 (2 1/2 ounce) jars prune baby food (equalling 1/2 cup)
  • 1 teaspoon canola oil, olive oil, whatever you prefer
  • 1 (1 ounce) packet hot cocoa mix
  • 1/3 cup light vanilla soymilk
  • 1 egg
  • 1 egg
  • cooking spray (for the pan)

Recipe

  • 1 combine ingredients in large bowl, until mixed. spray 13x9x2 baking pan with cooking spray. transfer contents of bowl to pan. bake for approximately 25 minutes at 350 degrees.
  • 2 use whichever brands you prefer. (i used a "generic" brownie mix from save-a-lot!).
  • 3 you can add "extras" as desired i.e. nuts, chocolate chips, etc. bear in mind this will alter the nutritional info.

Spinach And Mushroom Quesadillas

Ingredients

  • Servings: 4
  • 2 tablespoons canola oil
  • 3 medium red onions, thinly sliced
  • 8 ounces button mushrooms (we used a combination of both) or 8 ounces cremini mushrooms, thinly sliced (we used a combination of both)
  • 6 ounces prewashed spinach, shredded (about 8 cups)
  • 1/2 lb cooked & crispy bacon
  • coarse salt, to taste
  • fresh ground black pepper, to taste
  • 1 pinch crushed red pepper flakes
  • fresh grated nutmeg
  • 8 flour tortillas (8-inch)
  • 8 ounces shredded monterey jack pepper cheese (we used a combination of the three) or 8 ounces shredded cheddar cheese (we used a combination of the three) or 8 ounces cubed brie cheese (we used a combination of the three)

Recipe

  • 1 preheat oven to 400ºf.
  • 2 in a 12-inch skillet over medium heat, warm 1 tablespoon oil.
  • 3 cook the onions, stirring occasionally, until lightly golden, about 5 minutes.
  • 4 add the mushrooms; cook, stirring occasionally, until they're tender, 6 to 8 minutes.
  • 5 add spinach in two batches, letting the first batch wilt slightly before adding the next; cook until spinach is completely wilted and mixture is dry, 2 to 3 minutes total.
  • 6 season with salt, pepper, & crushed red pepper flakes.
  • 7 brush one side of tortillas with remaining tablespoon oil.
  • 8 place 4 tortillas, oiled sides down, on two baking sheets.
  • 9 layer each tortilla with cheese, crumbled bacon, spinach mixture sprinkled with nutmeg, and more cheese, dividing evenly.
  • 10 top with the remaining 4 tortillas, oiled sides up, and lightly press to seal.
  • 11 bake until cheese has melted and tortillas are golden brown, turning them once, about 10 minutes.
  • 12 to serve, cut quesadillas into quarters.

Grebbel (fried Dough)

Ingredients

  • 1/2 cup soft butter (no substitute)
  • 1/2 pint sour cream (do not use fat free or low fat)
  • 4 eggs, beaten
  • 4 cups flour
  • 1/4 teaspoon baking soda
  • 2 teaspoons baking powder
  • 2 tablespoons sugar
  • 1/2 teaspoon salt
  • canola oil or vegetable oil, for frying

Recipe

  • 1 sift dry ingredients together.
  • 2 combine butter, sour cream and eggs; blend together well. add dry ingredients and mix together. (makes a soft dough.)
  • 3 let dough rest at room temperature for 1 hour - it will rise.
  • 4 knead down and roll out on lightly floured board to about 1/8" thick.
  • 5 cut into desired shape (3" x 5" strips) and cut center slits (2).
  • 6 push dough through slits (this creates a twist) and drop into 350 degree hot oil.
  • 7 watch closely and turn over and fry to lightly browned.
  • 8 drain on paper towels, shake on powdered sugar and enjoy!

Ruth's Chicken Enchiladas (modified)

Ingredients

  • 1 (2 1/2 lb) rotisserie-cooked chicken
  • 2 tablespoons canola oil or 2 tablespoons vegetable oil
  • 1 large onion, chopped
  • 3 garlic cloves, minced
  • 1 (6 ounce) can olives, sliced and divided
  • 1 (4 ounce) can chilies, diced
  • 8 ounces mexican cheese, shredded and divided
  • 12 corn tortillas
  • 1 (14 ounce) can enchilada sauce
  • 1 (14 ounce) can tomato sauce
  • 1 tomato, diced
  • sour cream

Recipe

  • 1 chicken preparation: separate chicken meat from bones and skin. place in a large bowl.
  • 2 filling: heat oil in skillet on medium. sauté onion and garlic until caramelized. add to chicken. add half of the olives, chilies, and half the cheese. mix well.
  • 3 sauce: mix enchilada sauce, tomato sauce, and tomato in a small bowl. spread 1/2 cup of sauce evenly on the bottom of a rectangular baking dish.
  • 4 tortilla preparation: spray small skillet with non-stick spray. heat on medium-high stove top. when hot, place tortilla on top. after tortilla starts to expand, turn over. remove promptly when starts to expand again. respray skillet occasionally. stack warm tortillas on a plate and keep covered with aluminum foil.
  • 5 take one tortilla. place a proportional amount of filling in middle of tortilla (from one end to the other). fold tortilla ends over filling and place folded-side down in prepared dish. repeat, laying enchiladas side-by-side until dish is full.
  • 6 cover enchiladas with remaining sauce. top with remaining cheese and olives. bake in 350°f oven for 30 minutes. remove from oven and let set for 5 minutes. serve with sour cream.

  • 2/3 cup honey or 1 cup sugar
  • 3/4 cup ketchup
  • 1/2 cup good quality apple cider vinegar
  • 1 cup canola oil
  • 2 teaspoons sea salt
  • 2 teaspoons paprika
  • 1 teaspoon finely diced garlic
  • 1 onion, chopped

Recipe

  • 1 mix in a blender.
  • 2 keep refrigerated.
  • 3 shake before serving.

Yakisoba

Total Time: 30 mins Preparation Time: 20 mins Cook Time: 10 mins

Ingredients

  • Servings: 6
  • 1/2 teaspoon sesame oil
  • 1 tablespoon canola oil
  • 2 tablespoons hoisin sauce (or tonkatsu sauce for a more authentic taste)
  • 2 garlic cloves, chopped
  • 1 tablespoon minced ginger, about a 1-inch piece
  • 4 boneless skinless chicken breast halves, cut into 1 inch cubes
  • 1/4 cup soy sauce
  • 1 onion, sliced into wedges
  • 1/2 medium head cabbage, coarsely chopped
  • 2 carrots, coarsely chopped
  • 1 cup bean sprouts
  • 8 ounces soba noodles, cooked and drained

Recipe

  • 1 in a large skillet combine sesame oil, canola oil and tonkatsu or hoisin sauce. stir fry 30 seconds. add garlic and ginger and stir fry an additional 30 seconds. add chicken and soy sauce and stir fry until chicken is no longer pink. remove mixture from pan, set aside and keep warm.
  • 2 in the emptied pan combine the onion, cabbage, carrots and bean sprouts. stir fry until cabbage begins to wilt. stir in the cooked noodles and the chicken mixture, and serve.

Strawberry-rhubarb Meringue Pie

Ingredients

  • canola oil cooking spray
  • 1 cup gluten-free graham cracker crumbs
  • 3 cups sliced strawberries
  • 1 cup rhubarb, chopped
  • 1/2 cup sugar, plus
  • 2 tablespoons sugar
  • 1/4 teaspoon salt
  • 1 (1/4 ounce) envelope unflavored gelatin
  • 1 1/2 teaspoons vanilla
  • 1/2 cup egg
  • 1/4 teaspoon cream of tartar

Recipe

  • 1 coat a 9" pie plate with cooking spray.
  • 2 pour in crumbs and press to form an even layer.
  • 3 bake in a preheated 375* f oven for 10 minutes.
  • 4 mash 1 1/2 cups strawberries with rhubarb, salt, and 1/2 cup sugar in a pot over medium heat.
  • 5 bring to a boil; stir in gelatin.
  • 6 remove from heat; add 1 tsp vanilla and remaining strawberries.
  • 7 mix egg whites and cream of tartar in a bowl; beat until soft peaks form.
  • 8 add remaining sugar and remaining vanilla; beat until stiff.
  • 9 spoon berries onto piecrust; top with meringue.
  • 10 bake for an additional 12 minutes.
  • 11 let cool; refrigerate at least 3 hours.
  • 12 enjoy!

  • 1 cup flour
  • 1 cup whole wheat flour
  • 1 1/4 cups oats, quick
  • 2/3 cup packed brown sugar
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 eggs
  • 2 2/3 cups milk
  • 4 tablespoons canola oil

Recipe

  • 1 in a bowl, beat the eggs, oil and milk together.
  • 2 mix in all dry ingredients well.
  • 3 pour by 1/3 cupfuls onto a lightly oiled, hot griddle.
  • 4 when tops look bubbly, flip and cook until done.
  • 5 these are to be eaten by hand.

Oh Splendida Cheesecake

Total Time: 25 hrs 20 mins Preparation Time: 24 hrs Cook Time: 1 hr 20 mins

Ingredients

  • 1 1/2 lbs ricotta cheese (whole milk ricotta works best)
  • 1 lb cream cheese
  • 6 large eggs
  • 2 tablespoons vanilla
  • 2 teaspoons orange extract
  • 6 tablespoons flour
  • 1 pint sour cream
  • 1 cup splenda sugar substitute (or 1 cup sugar)
  • 1 (1 lb) package sugar-free caramels (or 1 pound package kraft caramels)
  • 2 tablespoons canola oil
  • 1 (1 lb) package pecan halves
  • plain breadcrumbs (for dusting pan)

Recipe

  • 1 preheat oven to 325ºf.
  • 2 cream together the ricotta and cream cheese (if using regular sugar beat it into the ricotta and cream cheese mixture until well blended).
  • 3 if using splenda hold and add at step 6.
  • 4 add the eggs one at a time, beating each in well.
  • 5 add the vanilla and orange extract.
  • 6 spoon in the flour, sour cream and splenda (if using), mix well.
  • 7 mixture will be loose; don't worry.
  • 8 grease a 10 inch spring form pan with butter or margarine and dust with bread crumbs (merely helps cake not to stick) pour cheese cake batter into prepared pan and bake at 325ºf for about 1 hour (cake has a tendency to crack. don't worry, the topping will cover any crack).
  • 9 (tip: if you didn't beat properly and discover you have lumps of cream cheese at the bottom as you are pouring into the pan, since there is no crust you can use an electic hand mixer and beat the cream cheese right in the pan) cool cake completely.
  • 10 in the top of a double boiler melt the caramels with 2 tablespoons of oil stirring until nice and smooth.
  • 11 spread the melted caramels over the top of the cooled cheesecake.
  • 12 arrange the pecan halves in a nice pattern pressing them gently into the still warm caramel.
  • 13 refrigerate the cheesecake preferably overnight.

Home Made French Dressing

Ingredients

  • 2/3 cup ketchup
  • 1/2 cup sugar
  • 1/3 cup vegetable oil
  • 1/3 cup apple cider vinegar
  • 1/2 onion, sliced
  • 1 tablespoon worcestershire sauce
  • 1/8 teaspoon pepper
  • 1/4 teaspoon salt

Recipe

  • 1 combine all ingredients in food processor or blender. cover and blend until the onion is pureed and mixture is thick and smooth. cover and store in the refrigerator for up to 5 days, stirring before serving if necessary. makes about 3/4 cup dressing.
  • 2 my note: i was pretty much out of acv (as i am finding so many uses for it lately!) so i used some wine vinegar instead and it's great although i would prefer to have used organic acv for the health benefits.
  • 3 at times i used 1/2 canola oil and 1/2 olive oil, cut the worcestershire sauce to 1/2 tablespoon, and used 1/2 tablespoon onion powder instead of the fresh onion. i also used distilled vinager.

Tasty Beef Stir-fry

Ingredients

  • Servings: 6
  • 1 large steak, sliced
  • 4 tablespoons black bean garlic sauce
  • 3 teaspoons sesame oil
  • 1/2 cup soy sauce
  • canola oil
  • 1/2 onion, julienned
  • 8 ounces sugar snap peas
  • 1/2 bok choy, cut into bite-sized pieces
  • 15 baby carrots
  • 1 small zucchini
  • 1 small yellow squash
  • 1 (8 ounce) can water chestnuts
  • 1 (8 ounce) can bamboo shoots
  • 1 (16 ounce) can baby corn
  • 1 (5 ounce) bag peanuts

Recipe

  • 1 slice the steak and douse with soy sauce, let sit overnight or at least 4 hours. just use enough to make sure all the meat has some on it, don't use too much.
  • 2 fry up the steak in a few tablespoons of canola oil, one big spoonful of bean paste, and a few shakes of sesame oil. set aside.
  • 3 using the same pan, begin cooking the vegetables. i start with the onion and carrots, then add the bok choy, and finish with the zucchini, squash, and peas. add more bean paste and sesame oil to taste (i usually put in another large spoonful of bean paste at this step). add soy sauce as well, if you'd like.
  • 4 at the same time as the zucchini, add the rest of the meat, the water chestnuts, bamboo shoots, baby corn and peanuts.
  • 5 season with more of the sauces to taste, serve over rice.

Tsizzles Sloppy Joes

Ingredients

  • 3 tablespoons canola oil
  • 1 lb ground turkey
  • 1 onion, diced
  • 4 garlic cloves, minced
  • 1 jalapeno, minced
  • 1 red pepper, diced
  • 1 (14 ounce) can red beans or 1 (14 ounce) can pinto beans, preferably low sodium drained and rinsed
  • 1 1/2 cups no-salt-added tomato sauce
  • 1/4 cup sugar
  • 2 tablespoons tomato paste
  • 1 tablespoon red wine vinegar
  • 1 tablespoon molasses
  • 1 1/2 teaspoons worcestershire sauce
  • 2 tablespoons whole grain mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon fresh ground black pepper
  • 8 whole wheat hamburger buns

Recipe

  • 1 1. brown the turkey and onion w/half the salt and half the pepper in canola oil in a large cast iron skillet over medium-high heat for 5 minutes, breaking up the meat into crumbles as it cooks.
  • 2 2. add the garlic, jalapeno, and red pepper and cook 5 minutes more, stirring occasionally.
  • 3 3. stir in the rest of the ingredients, reduce heat to low, and simmer for 20 minutes more. place a half-cup scoop of the mixture onto each bun and serve.

Three Grain Raspberry Muffins

Ingredients

  • 1/2 cup rolled oats
  • percent low-fat milk (soya milk) or plain soymilk (soya milk)
  • 3/4 cup all-purpose flour (plain)
  • 1/2 cup cornmeal, preferably stone-ground
  • 1/4 cup wheat bran
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup dark honey
  • 3 1/2 tablespoons canola oil
  • 2 teaspoons grated lime zest
  • 1 egg, lightly beaten
  • 2/3 cup raspberries

Recipe

  • 1 preheat the oven to 400 degrees.
  • 2 line a 12-cup muffin pan with paper or foil liners.
  • 3 in a large microwave-safe bowl, combine the oats and milk.
  • 4 microwave on high until the oats are creamy and tender, about 3 minutes.
  • 5 set aside.
  • 6 in a large bowl, combine the flour, cornmeal, bran, baking powder and salt.
  • 7 whisk to blend. add the honey, canola oil, lime zest, oats mixture and egg.
  • 8 beat just until moistened but still slightly lumpy.
  • 9 gently fold in the raspberries.
  • 10 spoon the batter into the muffin cups, filling each cup about 2/3 full.
  • 11 bake until the tops are golden brown and a toothpick inserted into the center of a muffin comes out clean, 16 to 18 minutes.
  • 12 transfer the muffins to a wire rack and let cool completely.

Sauteed Lamb Chops

  • 4 center-cut lamb chops
  • 1/2 cup flour
  • 1 teaspoon salt
  • 1/8 teaspoon pepper

  • 1/4-1/2 cup chicken broth

Recipe

  • 1 coat chops in flour seasoned with salt and pepper.
  • 2 beat eggs and mix with milk.
  • 3 dip floured chops in egg mixture.
  • 4 dip chops in bread crumbs.
  • 5 heat oil in skillet.
  • 6 when hot, add lamb chops and brown 3 minutes on each side.
  • 7 add chicken broth and garlic.
  • 8 cover and cook over medium heat for 45 minutes, or until chops are tender.

Pumpkin Honey Beer Quick Bread

Ingredients

  • 14 5/8 ounces all-purpose flour (about 3 1/4 cups)
  • 2 teaspoons salt
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1 teaspoon pumpkin pie spice
  • 1/2 cup water
  • 1/3 cup ground flax seed
  • 2 1/2 cups sugar
  • 2/3 cup canola oil
  • 2/3 cup honey beer (at room temperature)
  • 1/2 cup egg substitute
  • 2 large eggs
  • 1 (15 ounce) can pumpkin
  • cooking spray

Recipe

  • 1 preheat oven to 350°.
  • 2 weigh or lightly spoon flour into dry measuring cups; level with a knife. combine flour, salt, and next 4 ingredients (through pumpkin pie spice) in a medium bowl; stir with a whisk.
  • 3 combine 1/2 cup water and flaxseed.
  • 4 place sugar and next 4 ingredients (through eggs) in a large bowl; beat with a mixer at medium-high speed until well blended.
  • 5 add flaxseed mixture and pumpkin; beat at low speed just until blended. add flour mixture; beat just until combined.
  • 6 divide batter between 2 (9 x 5–inch) loaf pans coated with cooking spray. bake at 350° for 1 hour and 10 minutes or until a wooden pick inserted in center comes out clean.
  • 7 cool 10 minutes in pan on a wire rack; remove from pans. cool completely on wire rack.

Sweet And Savory Rosemary Belgian Waffles

  • 1 *you can find this blend of salt and hickory flavoring in the spice section from spice islands under the name "old hickory smoked salt." if you can't find that stuff, just substitute with 1/8 teaspoon salt and 1/8 teaspoon hickory liquid smoke flavoring.
  • 2 prepare sweet hickory spread by melting 3 tablespoons butter over medium/low heat. add 1 cup minced onion and sauté for 7 to 10 minutes or until the onions start to brown. add 2 teaspoons flour and stir until the flour is incorporated. let this cook for a minute or two, then add molasses, water, vinegar, and hickory salt. simmer sauce for 3 to 4 minutes or until thick. remove from heat and cover.

  • 1 brown meat in hot oil, add onion and garlic, finish browning.
  • 2 stir in ketchup, worcestershire sauce, vinegar, and spices.
  • 3 add 3 cups water and simmer for 2 hours.
  • 4 thicken liquid with 2 tbsps flour and 1/4 cup water. you may also use cornstarch if you prefer. also you may need to repeat if it is not thick enough for your tastes.
  • 5 serve over hot cooked noodles. any kind of noodles are fine i like the rotini because it holds the sauce better.

Strawberry-meringue Pie

Ingredients

  • canola oil cooking spray
  • 1 cup graham cracker crumbs
  • 4 cups sliced strawberries
  • 1 cup sugar
  • 2 tablespoons sugar
  • 1/4 teaspoon salt
  • 1 (1/16 ounce) envelope unflavored gelatin (one packet from a 1 ounce box)
  • 1 1/2 teaspoons vanilla extract
  • 1/2 cup pasteurized egg
  • 1/4 teaspoon cream of tartar

Recipe

  • 1 heat oven to 375°.
  • 2 coat a 9" pie plate with cooking spray; pour in crumbs; press to form an even layer.
  • 3 bake 15 minutes.
  • 4 mash 2 cups berries with 1 cup sugar and salt in a medium pan over medium heat.
  • 5 bring to a boil; stir.
  • 6 add gelatin; stir until dissolved.
  • 7 remove from heat; add 1 tsp vanilla and remaining 2 cups berries.
  • 8 mix egg whites and cream of tartar in a bowl; beat until soft peaks form.
  • 9 add remaining 2 tbsp sugar and remaining 1/2 tsp vanilla; beat until stiff.
  • 10 spoon berries onto piecrust; top with meringue.
  • 11 bake 12 minutes.
  • 12 cool; refrigerate at least 3 hours.
