Peach Oatmeal Quick Bread

Ingredients
- 1 (16 ounce) can peach slices
- 2 cups whole wheat flour
- 3/4 cup sugar
- 3 teaspoons baking powder
- 1 teaspoon salt
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1 cup quick-cooking rolled oats
- 2 eggs
- 1 cup milk
- 1/4 cup canola oil
Recipe
- 1 drain peaches; cut into small pieces; set aside.
- 2 in mixing bowl, stir together flour, sugar, baking powder, salt, baking soda and cinnamon.
- 3 add oats and peaches.
- 4 stir lightly to coat peaches.
- 5 beat eggs well; combine with milk and oil.
- 6 add to flour mixture, stirring just until dry ingredients are moistened.
- 7 pour into greased (or sprayed) 9x5x3-inch loaf pan.
- 8 bake in 350f oven for 1 hour, or until a toothpick inserted near center of bread comes out clean.
- 9 cool in pan for 10 minutes.
- 10 transfer to cooling rack and cool completely.
- 11 wrap in foil.
