Peach Oatmeal Quick Bread

Total Time: 1 hr 15 mins Preparation Time: 15 mins Cook Time: 1 hr

Ingredients

  • 1 (16 ounce) can peach slices
  • 2 cups whole wheat flour
  • 3/4 cup sugar
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1 cup quick-cooking rolled oats
  • 2 eggs
  • 1 cup milk
  • 1/4 cup canola oil

Recipe

  • 1 drain peaches; cut into small pieces; set aside.
  • 2 in mixing bowl, stir together flour, sugar, baking powder, salt, baking soda and cinnamon.
  • 3 add oats and peaches.
  • 4 stir lightly to coat peaches.
  • 5 beat eggs well; combine with milk and oil.
  • 6 add to flour mixture, stirring just until dry ingredients are moistened.
  • 7 pour into greased (or sprayed) 9x5x3-inch loaf pan.
  • 8 bake in 350f oven for 1 hour, or until a toothpick inserted near center of bread comes out clean.
  • 9 cool in pan for 10 minutes.
  • 10 transfer to cooling rack and cool completely.
  • 11 wrap in foil.
