Lentil Roll-ups

Total Time: 40 mins Preparation Time: 20 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 1 cup cooked lentils
  • 2 tablespoons parmesan cheese, grated (optional)
  • 1 tablespoon onion, finely chopped
  • 1/4 teaspoon oregano, dry,crumbled
  • 1/4 teaspoon thyme, dry,crumbled
  • 1/8 teaspoon black pepper
  • 1 clove garlic, minced
  • 1 (1 lb) package phyllo pastry
  • 2 tablespoons canola oil

Recipe

  • 1 puree the cooked lentils.
  • 2 add cheese, onion, and spices.
  • 3 mix well.
  • 4 preheat oven to 325 degrees.
  • 5 cut individual phyllo pastry sheets into 6 x 8" pieces and brush with oil.
  • 6 spread 1 tsp filling along one end of pastry sheet and roll over once.
  • 7 turn in pastry edges and roll up like a cigar.
  • 8 repeat.
  • 9 place filled pastries on a non-stick baking sheet and bake at 325 for 15 to 20 minutes until golden brown.
