Spinach Salad W/green Onion Vinaigrette

Ingredients

  • Servings: 6
  • 1 head iceberg lettuce, torn
  • 1 package baby spinach leaves
  • 1/2 small red onion, thinly sliced
  • 10 mushrooms, sliced
  • 1/2 lb grated swiss cheese
  • 1/2-1 lb cooked crumbled bacon (to taste)
  • 1/3 cup wine vinegar
  • 1/3 cup sugar
  • 3/4 teaspoon salt
  • 3/4 cup canola oil
  • 3 green onions, chopped
  • 1/2 teaspoon dried mustard
  • 1 teaspoon celery seed

Recipe

  • 1 salad: toss iceberg lettuce, spinach, onion, mushroom slices, grated swiss chees and bacon in large bowl.
  • 2 dressing: combine all ingredients in a blender and blend well.
  • 3 just before serving pour dressing over the salad and toss.
  • 4 you can also serve the dressing to the-side of the salad.
