Sweet And Spicy Grilled Cheese Sandwiches

Ingredients

- 2 teaspoons canola oil
- 1 large red onion, finely diced (about 2 cups)
- salt
- fresh ground black pepper
- 3 ounces sharp cheddar cheese, thinly sliced
- 8 slices whole wheat bread
- 3 ounces monterey jack pepper cheese, thinly sliced
- 1 large ripe beefsteak tomato, sliced
- cooking spray
Recipe
- 1 heat the oil in a large nonstick skillet over medium heat.
- 2 add in the onion; cook/stir until golden and the edges are browned, 10-12 minutes; season with salt and pepper.
- 3 divide the cheddar cheese between 4 slices of bread; spread 1 tablespoon caramelized onions on top of the cheddar, then top with pepper jack cheese.
- 4 place 1 slice tomato and the other slice of bread on top to make a sandwich.
- 5 clean and dry the skillet; coat skillet with cooking spray and heat over med-high heat until hot.
- 6 place one of the sandwiches in the skillet and weigh down with a heavy skillet or plate.
- 7 decrease heat to med-low and grill until the underside is a deep brown but not burnt and the cheese is partially melted, 5-6 minutes.
- 8 flip the sandwich and grill the other side until it is nicely colored, another 4-5 minutes.
- 9 slice in half and serve hot.
- 10 repeat with the other sandwiches.
