Sweet And Spicy Grilled Cheese Sandwiches

Ingredients

  • Servings: 4
  • 2 teaspoons canola oil
  • 1 large red onion, finely diced (about 2 cups)
  • salt
  • fresh ground black pepper
  • 3 ounces sharp cheddar cheese, thinly sliced
  • 8 slices whole wheat bread
  • 3 ounces monterey jack pepper cheese, thinly sliced
  • 1 large ripe beefsteak tomato, sliced
  • cooking spray

Recipe

  • 1 heat the oil in a large nonstick skillet over medium heat.
  • 2 add in the onion; cook/stir until golden and the edges are browned, 10-12 minutes; season with salt and pepper.
  • 3 divide the cheddar cheese between 4 slices of bread; spread 1 tablespoon caramelized onions on top of the cheddar, then top with pepper jack cheese.
  • 4 place 1 slice tomato and the other slice of bread on top to make a sandwich.
  • 5 clean and dry the skillet; coat skillet with cooking spray and heat over med-high heat until hot.
  • 6 place one of the sandwiches in the skillet and weigh down with a heavy skillet or plate.
  • 7 decrease heat to med-low and grill until the underside is a deep brown but not burnt and the cheese is partially melted, 5-6 minutes.
  • 8 flip the sandwich and grill the other side until it is nicely colored, another 4-5 minutes.
  • 9 slice in half and serve hot.
  • 10 repeat with the other sandwiches.
