Wild Greens And Shrimp W/ Cucumber Yogurt Dressing

Ingredients

  • Servings: 4
  • 1 bell pepper, seeded and chopped
  • 3 green onions, chopped
  • 1 english cucumber, chopped and seeded
  • 1 cup plain yogurt
  • 1 tablespoon canola oil
  • 1 tablespoon fresh lemon juice
  • sea salt
  • fresh ground black pepper

Recipe

  • 1 dressing: blend and puree ingredients until smooth. adjust salt and pepper to taste.
  • 2 salad: combine greens, shrimp, and parsley in salad bowl.
  • 3 add dressing to salald and toss lightly.
