Sunshine Lemon Pound Cake

Ingredients

• 2 1/2 cups flour
• 1 1/2 cups granulated sugar
• 1 tablespoon baking powder
• 1/2 teaspoon salt
• 4 eggs
• 3/4 cup orange juice
• 3/4 cup vegetable oil (or canola)
• 2 teaspoons lemon extract

Recipe

• 1 preheat oven to 325; generously spray a 12-cup bundt pan with cooking spray/baking spray; set aside.
• 2 mix all ingredients in large bowl.
• 3 beat with electric mixer on medium speed for 3 minutes.
• 4 pour into prepared pan.
• 5 bake 40-50 minutes or until toothpick inserted in center comes out clean.
• 6 remove from oven and let sit at least 30 minutes.
• 7 invert onto serving plate.
• 8 can be sliced warm but also cools very quickly.
