Spicy Seitan

Total Time: 1 hr 10 mins Preparation Time: 10 mins Cook Time: 1 hr

Ingredients

  • 1 1/2 cups vital wheat gluten
  • 1/4 cup nutritional yeast flakes
  • 2 teaspoons garlic powder
  • 2 teaspoons paprika
  • 2 teaspoons black pepper
  • 1 teaspoon salt
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon cumin
  • 1 cup water
  • 4 tablespoons tomato paste
  • 4 tablespoons canola oil or 4 tablespoons vegetable oil
  • 1 tablespoon soy sauce
  • 1/4 teaspoon liquid smoke (optional, use more to taste)

Recipe

  • 1 sift together all dry ingredients in a large bowl.
  • 2 in a separate bowl, mix wet ingredients.
  • 3 add the liquid mixture to the dry ingredients.
  • 4 knead until well mixed and shape into an 8 inch (or so) loaf.
  • 5 lay out a fairly large sheet of aluminum foil, place the loaf in the center, and wrap foil around loaf lengthwise, twisting the ends to form a sausage link-like loaf.
  • 6 steam loaf (still wrapped in foil) for 30-45 mins (see note in description).
  • 7 pre-heat oven to 350°f.
  • 8 place loaf (still wrapped foil) on a baking sheet or in a pan and bake for 30-45 mins (see note in description).
  • 9 remove, unwrap, let cool, and enjoy!
