Southwest Smothered Chicken

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • 4 (6 ounce) boneless skinless chicken breast halves
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon cayenne pepper
  • 1 tablespoon canola oil
  • 1 cup fresh corn
  • 1 cup salsa
  • 4 ounces shredded monterey jack pepper cheese
  • 1/4 cup pickled jalapeno pepper
  • 1/4 cup sour cream

Recipe

  • 1 flatten chicken to 1/2 inch thickness.
  • 2 sprinkle both sides with cumin and cayenne.
  • 3 in a large skillet, cook chicken in oil over medium heat for 4-5 minutes on each side or until no longer pink.
  • 4 meanwhile combine corn, and salsa, and spoon over chicken.
  • 5 top with cheese and jalapenos.
  • 6 cover and cook for 3-5 minutes or until heated through and cheese is melted.
  • 7 top each with chicken breast, and a dollop of sour cream.
