Lamb And Asparagus Stir-fry

Total Time: 15 mins Preparation Time: 10 mins Cook Time: 5 mins

Ingredients

  • Servings: 4
  • 8 ounces lamb loin chops, julienned
  • 2 tablespoons dry sherry
  • 1 tablespoon soy sauce
  • 2 teaspoons cornstarch
  • 1 teaspoon grated gingerroot
  • 1 lb asparagus, trimmed
  • 2 teaspoons canola oil
  • 3 green onions, cut into 11/2 inch (4 cm)
  • 1 cup sliced shiitake mushroom caps
  • 1/2 cup chicken broth
  • 1 teaspoon granulated sugar

Recipe

  • 1 in a bowl, combine lamb, half of the sherry, soy sauce, cornstarch and ginger to coat. set aside.
  • 2 cut each asparagus stalk into 4 pieces. set aside.
  • 3 in a wok, heat oil over high heat and stir fry onions until fragrant. add lamb and stir fry until no longer pink.
  • 4 add asparagus and mushrooms and stir fry for about 1 minute. stir in chicken broth, sugar and remaining sherry. stir fry until asparagus is tenercrisp.
