Grilled Greek-style Zucchini

Ingredients

- 4 small zucchini, thinly sliced
- 1 medium tomato, seeded and chopped
- 1/4 cup pitted ripe olives, halved
- 2 tablespoons green onions, chopped
- 4 teaspoons olive oil or 4 teaspoons canola oil
- 2 teaspoons lemon juice
- 1/2 teaspoon oregano, dried
- 1/2 teaspoon garlic salt
- 1/4 teaspoon pepper
- 2 tablespoons parmesan cheese, grated
Recipe
- 1 combine zucchini, tomato, olives, and onion in a bowl.
- 2 combine oil, lemon juice, oregano, garlic salt, and pepper.
- 3 pour over vegetables and toss to coat.
- 4 place on a double thickness of heavy-duty foil(about 23 inx 18in).
- 5 fold foil around vegetables and seal tightly.
- 6 grill, covered, over medium heat for 10-15 minutes or until vegetables are tender.
- 7 sprinkle with parmesan cheese.
