Grilled Greek-style Zucchini

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • Servings: 6
  • 4 small zucchini, thinly sliced
  • 1 medium tomato, seeded and chopped
  • 1/4 cup pitted ripe olives, halved
  • 2 tablespoons green onions, chopped
  • 4 teaspoons olive oil or 4 teaspoons canola oil
  • 2 teaspoons lemon juice
  • 1/2 teaspoon oregano, dried
  • 1/2 teaspoon garlic salt
  • 1/4 teaspoon pepper
  • 2 tablespoons parmesan cheese, grated

Recipe

  • 1 combine zucchini, tomato, olives, and onion in a bowl.
  • 2 combine oil, lemon juice, oregano, garlic salt, and pepper.
  • 3 pour over vegetables and toss to coat.
  • 4 place on a double thickness of heavy-duty foil(about 23 inx 18in).
  • 5 fold foil around vegetables and seal tightly.
  • 6 grill, covered, over medium heat for 10-15 minutes or until vegetables are tender.
  • 7 sprinkle with parmesan cheese.
