Scottish Slumpie

Total Time: 45 mins Preparation Time: 5 mins Cook Time: 40 mins

Ingredients

  • Servings: 3
  • 1 1/2 lbs ground beef
  • 1 tablespoon canola oil
  • 3 teaspoons minced garlic
  • 1/2 cup sliced mushrooms
  • 2 cups beef stock
  • 2 cups guinness stout
  • 3/4 lb frozen spinach
  • 1 tablespoon ketchup
  • 1 1/2 teaspoons sage
  • 1 teaspoon dry mustard
  • salt and pepper
  • 1/4 cup flour
  • 1/4 cup butter, softened

Recipe

  • 1 in a large saucepan, heat the oil and garlic.
  • 2 add the ground beef and brown.
  • 3 add mushrooms, beef stock, and guinness, and bring to a boil.
  • 4 add remaining ingredients and return to a boil.
  • 5 reduce heat and simmer for 1/2 hour, or until liquid has reduced by 1/4.
  • 6 serve with potato dumplings or mashed potatoes.
