Scottish Slumpie

Ingredients

- 1 1/2 lbs ground beef
- 1 tablespoon canola oil
- 3 teaspoons minced garlic
- 1/2 cup sliced mushrooms
- 2 cups beef stock
- 2 cups guinness stout
- 3/4 lb frozen spinach
- 1 tablespoon ketchup
- 1 1/2 teaspoons sage
- 1 teaspoon dry mustard
- salt and pepper
- 1/4 cup flour
- 1/4 cup butter, softened
Recipe
- 1 in a large saucepan, heat the oil and garlic.
- 2 add the ground beef and brown.
- 3 add mushrooms, beef stock, and guinness, and bring to a boil.
- 4 add remaining ingredients and return to a boil.
- 5 reduce heat and simmer for 1/2 hour, or until liquid has reduced by 1/4.
- 6 serve with potato dumplings or mashed potatoes.
