Scotch (butterscotch) Bars

Ingredients

  • 1/2 cup all-purpose flour
  • 1 cup graham cracker crumbs
  • 2/3 cup packed brown sugar
  • 1/3 cup quick-cooking oats
  • 1/3 cup butterscotch chips
  • 1 teaspoon baking powder
  • 1 tablespoon canola oil
  • 1 1/2 teaspoons vanilla extract
  • 2 large egg whites
  • cooking spray
  • 1 tablespoon powdered sugar

Recipe

  • 1 preheat oven to 350 degrees.
  • 2 lightly spoon flour into a dry measuring cup; level with a knife. combine flour, and next 5 ingredients (through baking powder), stirring with a whisk. set aside.
  • 3 combine oil, vanilla, and egg whites; add to flour mixture, stirring just until blended. lightly coat hands with cooking spray.
  • 4 press batter evenly into an 8-inch square baking pan coated with cooking spray. bake at 350 degrees for 18 minutes or until a wooden toothpick inserted in the center comes out clean. cool in pan on a wire rack. sift powdered sugar over top; cut into bars.
