Quick Okra Curry

Ingredients
- Servings: 4
- 250 g frozen okra, tops taken off and the rest cut into one inch pieces
- 1/2 cup chopped onion
- 2 tablespoons canola oil
- 1 teaspoon cayenne
- 1/2 teaspoon turmeric
- 1/2 teaspoon curry powder
- 1 teaspoon ginger powder
- 1 teaspoon garlic powder
- salt
- 1 medium tomato, chopped
- 1 cup water
Recipe
- 1 saute onions in oil until golden brown.
- 2 add spices and half cup water.
- 3 saute for two minutes on medium heat.
- 4 add okra, salt, and rest of water.
- 5 cook covered for 5 minutes.
- 6 add tomatoes. cover and cook until okra is cooked (15-20 min) on medium heat.
