Quick Okra Curry

Total Time: 25 mins Preparation Time: 5 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 250 g frozen okra, tops taken off and the rest cut into one inch pieces
  • 1/2 cup chopped onion
  • 2 tablespoons canola oil
  • 1 teaspoon cayenne
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon curry powder
  • 1 teaspoon ginger powder
  • 1 teaspoon garlic powder
  • salt
  • 1 medium tomato, chopped
  • 1 cup water

Recipe

  • 1 saute onions in oil until golden brown.
  • 2 add spices and half cup water.
  • 3 saute for two minutes on medium heat.
  • 4 add okra, salt, and rest of water.
  • 5 cook covered for 5 minutes.
  • 6 add tomatoes. cover and cook until okra is cooked (15-20 min) on medium heat.
