Pumpernickel Quick Bread

Total Time: 1 hr Preparation Time: 10 mins Cook Time: 50 mins

Ingredients

  • 1 cup rye flour
  • 1/2 cup cornmeal
  • 1/2 cup whole wheat flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2-1 teaspoon caraway seed
  • 2 eggs, beaten
  • 1/4 cup molasses
  • 3/4 cup milk
  • 1/4 cup vegetable oil or 1/4 cup canola oil
  • 1/2 tablespoon sesame seeds

Recipe

  • 1 set oven to 350 degrees.
  • 2 grease 1 9" x 5" loaf pan.
  • 3 in a bowl, combine rye flour, cornmeal, whole wheat flour, baking powder, baking soda and caraway seeds.
  • 4 in a small bowl, beat eggs, molasses, milk and oil.
  • 5 pour the wet ingredients over the dry ingredients; stir with a wooden spoon to blend.
  • 6 pour batter into prepared loaf pan.
  • 7 sprinkle with sesame seeds.
  • 8 bake 50-60 minu8tes, or until loaf tests done.
  • 9 remove bread from pan, cool on wire rack.
