Orange Lamb Chops

Total Time: 35 mins Preparation Time: 5 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 4 boneless lamb chops
  • 2 teaspoons canola oil
  • 1/2 cup packed brown sugar
  • 1/3 cup apple cider vinegar
  • 1 tablespoon reduced sodium soy sauce
  • 1 teaspoon molasses
  • 1 teaspoon grated orange rind
  • 2 teaspoons cornstarch
  • 1 tablespoon water
  • 1 large navel orange, peeled and sectioned
  • 3 cups cooked rice

Recipe

  • 1 heat canola oil in large skillet.
  • 2 brown lamb chops on both sides.
  • 3 remove lamb chops from pan; keep warm.
  • 4 in same pan, combine the brown sugar, vinegar, soy sauce, molasses and orange peel; stir until well blended.
  • 5 return lamb chops to pan; cover and simmer for 15 minutes.
  • 6 remove lamb chops from pan; keep warm.
  • 7 combine cornstarch and water until smooth; stir into pan juices.
  • 8 bring to a boil and cook for 2 minutes, until thick, stirring constantly.
  • 9 add orange sections, and continue stirring another minute until orange heated through.
  • 10 serve sauce and lamb chops over hot rice.
