Orange Lamb Chops

Ingredients

- 4 boneless lamb chops
- 2 teaspoons canola oil
- 1/2 cup packed brown sugar
- 1/3 cup apple cider vinegar
- 1 tablespoon reduced sodium soy sauce
- 1 teaspoon molasses
- 1 teaspoon grated orange rind
- 2 teaspoons cornstarch
- 1 tablespoon water
- 1 large navel orange, peeled and sectioned
- 3 cups cooked rice
Recipe
- 1 heat canola oil in large skillet.
- 2 brown lamb chops on both sides.
- 3 remove lamb chops from pan; keep warm.
- 4 in same pan, combine the brown sugar, vinegar, soy sauce, molasses and orange peel; stir until well blended.
- 5 return lamb chops to pan; cover and simmer for 15 minutes.
- 6 remove lamb chops from pan; keep warm.
- 7 combine cornstarch and water until smooth; stir into pan juices.
- 8 bring to a boil and cook for 2 minutes, until thick, stirring constantly.
- 9 add orange sections, and continue stirring another minute until orange heated through.
- 10 serve sauce and lamb chops over hot rice.
