Orange Lamb And Potatoes

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 4 medium potatoes, cut into â¾ inch cubes and microwave for 6 to 10 minutes until tender
  • 1 tablespoon canola oil
  • 1 lb lean lamb, cut into thin strips
  • 1 cup cherry tomatoes, optional
  • 1/3 cup orange marmalade
  • 2 tablespoons dijon-style mustard

Recipe

  • 1 while potatoes are cooking, heat oil in a large skillet over high heat.
  • 2 add lamb and toss until brown.
  • 3 drain, add potatoes and tomatoes.
  • 4 sauté and stir-fry 3 minutes.
  • 5 add marmalade and mustard and cook until marmalade is melted.
  • 6 season with salt and pepper.
