Nutty Vegan Pancakes

Ingredients

- 1 cup flour
- 1 tablespoon stevia
- 2 tablespoons baking powder
- 1 teaspoon salt
- 1/4 cup ground flax seeds
- 1 teaspoon almond extract
- 1/3 cup soy yogurt
- 1/2 cup soymilk
- 1/2 cup almond milk (homemade with pulp is best!)
- 1 tablespoon canola oil
Recipe
- 1 in a large bowl, mix flour, stevia, baking powder, salt, and flax seeds. make a well in the center, and pour in remaining ingredients.
- 2 heat griddle or frying pan over medium high heat. lightly spray with cooking spray or oil. pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. brown on both sides and serve hot.
