Nutty Chicken Strips With Honey Yogurt Dipping Sauce

Ingredients

  • 1 cup soft breadcrumbs
  • 1/2 cup chopped almonds
  • 2 tablespoons minced fresh cilantro
  • 1 1/2 teaspoons curry powder
  • 1/4 cup all-purpose flour
  • 1 egg
  • 1/2 cup low-fat milk
  • 1 1/2 lbs boneless skinless chicken breasts, cut into 1 inch strips
  • 1/4 cup canola oil
  • 1 cup plain yogurt
  • 2 tablespoons minced fresh cilantro
  • 1 tablespoon honey

Recipe

  • 1 in a large resealable plastic bag, combine bread crumbs, almonds, cilantro, and curry powder.
  • 2 place flour in a shallow bowl.
  • 3 in another shallow bowl, beat the egg, and milk.
  • 4 dip the chicken strips in flour, then in the egg mixture.
  • 5 then place in the resealable bag in step 1, and shake to coat.
  • 6 in a large skillet, cook chicken in oil for 5-6 minutes on each side or until no longer pink, and drain on paper towels.
  • 7 in a small bowl, combine the sauce ingredients, and serve with chicken.
