Egg-free Chocolate Banana Loaf

Total Time: 1 hr 5 mins Preparation Time: 15 mins Cook Time: 50 mins

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup sugar
  • 1/3 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup low-fat buttermilk
  • 3/4 cup banana (mashed)
  • 1/3 cup canola oil
  • 2 teaspoons vanilla

Recipe

  • 1 preheat oven to 350°f.
  • 2 coat 9x5 inch loaf pan (or 12-cup muffin tin) with cooking spray.
  • 3 whisk together flour, sugar, cocoa, baking soda, and salt in a bowl.
  • 4 in a separate bowl, whisk together buttermilk, mashed banana, oil and vanilla.
  • 5 fold buttermilk mixture into flour mixture.
  • 6 scoop batter into prepared pan(s). bake loaf 50-60 minutes (or muffins 18-22 mins).
  • 7 cool 5 minutes in pan, before serving.
