Egg-free Chocolate Banana Loaf

Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup sugar
- 1/3 cup unsweetened cocoa powder
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup low-fat buttermilk
- 3/4 cup banana (mashed)
- 1/3 cup canola oil
- 2 teaspoons vanilla
Recipe
- 1 preheat oven to 350°f.
- 2 coat 9x5 inch loaf pan (or 12-cup muffin tin) with cooking spray.
- 3 whisk together flour, sugar, cocoa, baking soda, and salt in a bowl.
- 4 in a separate bowl, whisk together buttermilk, mashed banana, oil and vanilla.
- 5 fold buttermilk mixture into flour mixture.
- 6 scoop batter into prepared pan(s). bake loaf 50-60 minutes (or muffins 18-22 mins).
- 7 cool 5 minutes in pan, before serving.
