Banana-yogurt Oatmeal Muffins

Total Time: 23 mins Preparation Time: 5 mins Cook Time: 18 mins

Ingredients

  • 3/4 cup all-purpose flour
  • 3/4 cup whole wheat flour
  • 2/3 cup brown sugar
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 tablespoons ground flax seeds
  • 1 cup rolled old fashioned oats
  • 1 1/2 cups mashed ripe bananas
  • 4 ounces blueberry greek yogurt
  • 2 eggs, beaten
  • 1/4 cup canola oil
  • 2 teaspoons vanilla
  • oats

Recipe

  • 1 preheat oven to 350 degrees.
  • 2 combine all dry ingredients and set aside.
  • 3 in a separate bowl, combine all wet ingredients.
  • 4 slowly mix in the dry mixture until well combined.
  • 5 spray your muffin pans with nonstick spray.
  • 6 fill each muffin cup 3/4 full and sprinkle with oats.
  • 7 bake at 350 for 18-20 minutes, depending on how moist you like your muffins.
