Syd's Saffron Rice

Total Time: 15 mins Preparation Time: 5 mins Cook Time: 10 mins

Ingredients

  • Servings: 8
  • 1 tablespoon ghee
  • 1 onion, diced
  • 2 cups basmati rice
  • 3 1/2 cups chicken broth
  • 1 pinch saffron
  • 1 tomato
  • 1/2 cup frozen peas
  • 1/4 cup cilantro

Recipe

  • 1 heat ghee in pan. (you can substitute clarified butter, olive, or canola oil for the ghee.).
  • 2 saute onion.
  • 3 add rice and saute until you release the rice aroma.
  • 4 add broth and saffron.
  • 5 bring to pressure in your pressure cooker for 10 minute if using basmati, 20 min for brown.
  • 6 release pressure, add chopped tomato, peas, and cilantro. stir and let sit while you prepare the rest of the meal.
  • 7 enjoy.
