Syd's Saffron Rice

Ingredients

- 1 tablespoon ghee
- 1 onion, diced
- 2 cups basmati rice
- 3 1/2 cups chicken broth
- 1 pinch saffron
- 1 tomato
- 1/2 cup frozen peas
- 1/4 cup cilantro
Recipe
- 1 heat ghee in pan. (you can substitute clarified butter, olive, or canola oil for the ghee.).
- 2 saute onion.
- 3 add rice and saute until you release the rice aroma.
- 4 add broth and saffron.
- 5 bring to pressure in your pressure cooker for 10 minute if using basmati, 20 min for brown.
- 6 release pressure, add chopped tomato, peas, and cilantro. stir and let sit while you prepare the rest of the meal.
- 7 enjoy.
