Secret Ingredient Chocolate Sheet Cake

Ingredients
- 2 eggs
- 2 egg whites
- 2 1/4 cups sugar
- 2 teaspoons vanilla extract
- 1/2 cup canola oil
- 3 cups all-purpose flour
- 1/2 cup baking cocoa
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 3/4 teaspoon salt
- 1 cup 2% buttermilk
- 3 cups coarsely shredded and unpeeled zucchini
- 1/2 cup butter
- 3 cups confectioners' sugar
- 1/4 cup baking cocoa
- 1 1/2 teaspoons vanilla extract
- 1/4 cup skim milk
Recipe
- 1 in a large bowl, beat eggs until frothy.
- 2 add sugar gradually, beating until mixture is thick and well mixed.
- 3 beat in vanilla and oil.
- 4 combine flour, cocoa, baking powder, baking soda and salt.
- 5 alternatively add flour mixture and buttermilk to egg/sugar mixture, ending with buttermilk.
- 6 beat until smooth.
- 7 fold in zucchini.
- 8 pour batter into 9 x 13 backing pan that has been sprayed with non-stick cooking spray.
- 9 bake at 350 for 40 to 45 minutes until toothpick comes out clean.
- 10 let cool.
- 11 to make frosting, beat together remaining five (5) ingredients until frosting is very creamy.
