Lori's Thai Cantaloupe Soup

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • Servings: 2
  • 1 medium cantaloupe
  • 3 tablespoons canola oil
  • 1 small onion (minced)
  • 3/4 cup grape tomatoes (halved)
  • 2 cups water
  • 1 tablespoon sugar
  • 1/2 teaspoon cayenne
  • 3 teaspoons nuoc nam
  • 1 green onion (minced)
  • 2 tablespoons peanuts (chopped)
  • cilantro (minced)

Recipe

  • 1 halve cantaloupe. scoop out seeds. remove flesh, reserving shells for "bowls".
  • 2 heat oil in a saucepan. add onion. sauté 2 minutes.
  • 3 add tomatoes and the cantaloupe. sauté 5 minutes.
  • 4 add the water, sugar, cayenne and nuoc nam.
  • 5 simmer 5 minutes.
  • 6 puree.
  • 7 return to pot. re-heat.
  • 8 top with the green onion, peanuts and cilantro, to taste.
  • 9 yum!
