Steamed Daikon Pudding

Ingredients
- Servings: 8
- 5 chinese sausage (chopped)
- 4 large green onions (minced)
- 2 large daikon radishes (peeled, minced)
- 1 cup water
- 3 tablespoons dried shrimp
- sea salt
- fresh ground pepper (to taste)
- 3 cups rice flour
- 2 cups water
- canola oil (as needed)
- 2 tablespoons soy sauce
- 1 tablespoon chinese chili paste with garlic
- 1 tablespoon oyster sauce
Recipe
- 1 saute sausages until crisp and rendered. drain. return to pan.
- 2 add the onions, daikon, water, shrimp, salt and pepper. bring to a boil. reduce. simmer 20 minutes. let cool.
- 3 whisk together the rice flour and water.
- 4 oil 2 (9 inch) cake pans.
- 5 stir flour mix into sausage mix.
- 6 place in pans. steam 30 minutes. let cool.
- 7 cover. chill 24 hours.
- 8 dab off excess water if there is any.
- 9 heat a little oil in a skillet.
- 10 slice pudding into wedges.
- 11 fry until golden on both sides.
- 12 combine the soy sauce, chile paste and oyster sauce.
- 13 serve wedges hot with sauce.
