Whole Wheat Vegan Pancakes

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 5
  • 2 1/4 cups whole wheat flour
  • 2 tablespoons ground flax seed
  • 2 tablespoons sugar
  • 2 tablespoons baking powder
  • 1 tablespoon canola oil
  • 1 teaspoon salt
  • 2 1/2 cups soymilk
  • 1 dash cinnamon
  • 1 dash vanilla extract
  • 1 cup berries (optional)

Recipe

  • 1 in a large bowl, add all ingredients except berries or nuts.
  • 2 mix lightly until combined. do not over-mix.
  • 3 let mixture rest 5 minutes.
  • 4 fold in optional berries or nuts.
  • 5 cook on a greased griddle over medium heat until golden.
  • 6 serve with homemade syrup or jam.
