Potato Wedgies

Total Time: 1 hr 40 mins Preparation Time: 40 mins Cook Time: 1 hr

Ingredients

  • Servings: 3
  • 1/2 cup canola oil
  • 4 cloves garlic, pressed
  • 4 tablespoons fresh lime juice
  • 3 teaspoons tabasco sauce
  • 1 teaspoon fresh thyme, chopped
  • 3 large potatoes, cut in to wedges (8 wedges from each potato.)

Recipe

  • 1 whisk first five ingredients well together.
  • 2 season with salt and pepper arrange all potato pieces in a 9 x 13 inch pan.
  • 3 pour all but 1/4 cup of the dressing onto potatoes.
  • 4 keep the last dressing to drizzle just before serving.
  • 5 toss the dressing all over the potatoes.
  • 6 let sit at room temp.
  • 7 for 40 minutes.
  • 8 preheat oven 400 degrees f.
  • 9 roast potatoes until crisp and brown turning occasionally.
  • 10 approx.
  • 11 60 minutes.
  • 12 drizzle the reserved dressing over potatoes, just as serving.
