Protein Upside Down Muffins

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • 1 tablespoon vanilla protein powder (1 scoop)
  • 3 tablespoons multi grain pancake mix
  • 1 tablespoon sugar free vanilla pudding mix
  • 3 tablespoons canola oil
  • 1 egg
  • 2 tablespoons sugar free torani syrup (i use vanilla)
  • 3 tablespoons milk
  • 1 drop imitation butter flavoring
  • 1 tablespoon smart balance butter spread (or any other flavor buttery spread)
  • 3 tablespoons crushed pinapple in juice (make sure it's not packed in syrup)
  • 1 teaspoon splenda brown sugar

Recipe

  • 1 blend together ingredients of vanilla protein powder, multi grain pancake mix, pudding mix.
  • 2 then add mixing well the ingredients of canola oil, egg, torani syrup, milk, imitation butter flavoring.
  • 3 in another bowl mix smart balance, crushed pinapple in juice, and splenda brown sugar.
  • 4 put 1 drop of pinapple mixture in each muffin tin, then cover with protein cake mixture.
  • 5 bake at 350 for 15 minutes.
