Lamb Chops With Sautéed Apples & Pecans

- 2 lamb chops, 1-inch thick (8 oz. each)
- 1/8 teaspoon kosher salt
- 1/8 teaspoon ground black pepper
- 2 teaspoons canola oil
- 1 cup jonagold apple, thinly sliced
- 1/2 cup onion, diced
- 1/2 teaspoon dry mustard
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon kosher salt
- 1/4 cup apple juice
- 1/2 teaspoon lemon juice
- 1 tablespoon pecans, toasted and chopped
Recipe
- 1 season lamb with 1⁄8 teaspoons salt and pepper. heat oil in a nonstick skillet over medium-high heat. add lamb; brown on both sides, about 5 minutes per side. remove lamb to a plate; tent with foil.
- 2 sauté apples and onion in the skillet for 4–5 minutes. add mustard, cinnamon, and 1⁄4 teaspoons salt, stirring until fragrant, about 30 seconds. stir in apple juice and lemon juice; cook until apples are softened.
- 3 return lamb chops and any juices on the plate to the skillet. cook, uncovered, until lamb reaches an internal temperature of 155°. serve apple mixture over chops; garnish with toasted pecans.
