Triple Chocolate And Orange Muffins

Ingredients
- 1 orange
- 1 egg
- 1/2 cup canola oil
- 1/2 cup low-fat milk
- 1/4 teaspoon salt
- 1/2 cup sugar
- 1/4 cup dark chocolate chips
- 1/4 cup chocolate chips
- 1/4 cup cocoa powder
- 1 1/2 cups self-raising flour
Recipe
- 1 preheat oven to 190c.
- 2 blitz the whole orange, cut into smaller chunks, in a blender or food processor.
- 3 add the egg, oil milk salt and sugar and mix together well in a large bowl.
- 4 sprinkle in the chocolate bits and cocoa and stir until evenly mixed.
- 5 sift and sprinkle it over the top of the other ingredients then fold it in without over-mixing, stopping when there are no streaks or pockets of flour visible.
- 6 spoon into a regular muffin pan which has been thoroughly sprayed with non stick spray.
- 7 bake for 15-20 mins or until the tops spring back when lightly touched. (cooking time varies from oven to oven and with the size of the muffins) leave to stand 2-3 minutes in their pans, then remove carefully and cool on a rack.
- 8 these muffins freeze well.
