Triple Chocolate And Orange Muffins

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • 1 orange
  • 1 egg
  • 1/2 cup canola oil
  • 1/2 cup low-fat milk
  • 1/4 teaspoon salt
  • 1/2 cup sugar
  • 1/4 cup dark chocolate chips
  • 1/4 cup chocolate chips
  • 1/4 cup cocoa powder
  • 1 1/2 cups self-raising flour

Recipe

  • 1 preheat oven to 190c.
  • 2 blitz the whole orange, cut into smaller chunks, in a blender or food processor.
  • 3 add the egg, oil milk salt and sugar and mix together well in a large bowl.
  • 4 sprinkle in the chocolate bits and cocoa and stir until evenly mixed.
  • 5 sift and sprinkle it over the top of the other ingredients then fold it in without over-mixing, stopping when there are no streaks or pockets of flour visible.
  • 6 spoon into a regular muffin pan which has been thoroughly sprayed with non stick spray.
  • 7 bake for 15-20 mins or until the tops spring back when lightly touched. (cooking time varies from oven to oven and with the size of the muffins) leave to stand 2-3 minutes in their pans, then remove carefully and cool on a rack.
  • 8 these muffins freeze well.
