Special Oatmeal Cookies (vegan)

Ingredients

- 1 1/2 cups whole wheat pastry flour
- 1 cup rolled oats
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 teaspoon cinnamon
- 1/3 cup canola oil
- 4 teaspoons cornstarch, mixed into
- 1/2 cup soymilk or 4 teaspoons water
- 3/4 cup sucanat (or any unrefined sugar)
- 1 teaspoon vanilla
- 1/2 cup coconut
- 3/4 cup semisweet vegan chocolate chips (optional)
Recipe
- 1 mix canola oil, cornstarch mixture, sucanat, vanilla, and coconut well in a good-sized bowl.
- 2 in a separate bowl, sift flour, cinnamon, salt, and baking powder together.
- 3 add oats to this mixture.
- 4 add the dry mixture to the wet one and mix well.
- 5 mix in chocolate chips.
- 6 form the dough into small balls or patties on a greased cookie sheet.
- 7 slightly flatten out mounds, because they do not seem to flatten during the baking process.
- 8 bake at 350°f for about 10 minutes, or until they are done when tested with a toothpick.
