Special Oatmeal Cookies (vegan)

Total Time: 30 mins Preparation Time: 20 mins Cook Time: 10 mins

Ingredients

  • Servings: 12
  • 1 1/2 cups whole wheat pastry flour
  • 1 cup rolled oats
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/3 cup canola oil
  • 4 teaspoons cornstarch, mixed into
  • 1/2 cup soymilk or 4 teaspoons water
  • 3/4 cup sucanat (or any unrefined sugar)
  • 1 teaspoon vanilla
  • 1/2 cup coconut
  • 3/4 cup semisweet vegan chocolate chips (optional)

Recipe

  • 1 mix canola oil, cornstarch mixture, sucanat, vanilla, and coconut well in a good-sized bowl.
  • 2 in a separate bowl, sift flour, cinnamon, salt, and baking powder together.
  • 3 add oats to this mixture.
  • 4 add the dry mixture to the wet one and mix well.
  • 5 mix in chocolate chips.
  • 6 form the dough into small balls or patties on a greased cookie sheet.
  • 7 slightly flatten out mounds, because they do not seem to flatten during the baking process.
  • 8 bake at 350°f for about 10 minutes, or until they are done when tested with a toothpick.
