Sage Mashed Potatoes

Total Time: 1 hr 25 mins Preparation Time: 35 mins Cook Time: 50 mins

Ingredients

  • Servings: 6
  • 4 medium potatoes, peeled and cut into 1/8 inch slices
  • 1 medium onion, chopped
  • 1/4 cup water
  • 2 tablespoons olive oil or 2 tablespoons canola oil
  • 1 tablespoon minced fresh sage or 1 teaspoon rubbed sage
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/2 cup low-fat plain yogurt

Recipe

  • 1 spray a 11 x 7 x 2 inch baking dish with pam.
  • 2 layer the potatoes and onion.
  • 3 combine the water, oil, sage, salt and pepper.
  • 4 pour over potatoe mixture.
  • 5 cover and bake at 450 degrees for 45 to 50 minutes or until potatoes are tender, stirring twice.
  • 6 transfer to a mixing bowl, add yogurt and mash.
