Sage Mashed Potatoes

Ingredients
- Servings: 6
- 4 medium potatoes, peeled and cut into 1/8 inch slices
- 1 medium onion, chopped
- 1/4 cup water
- 2 tablespoons olive oil or 2 tablespoons canola oil
- 1 tablespoon minced fresh sage or 1 teaspoon rubbed sage
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 1/2 cup low-fat plain yogurt
Recipe
- 1 spray a 11 x 7 x 2 inch baking dish with pam.
- 2 layer the potatoes and onion.
- 3 combine the water, oil, sage, salt and pepper.
- 4 pour over potatoe mixture.
- 5 cover and bake at 450 degrees for 45 to 50 minutes or until potatoes are tender, stirring twice.
- 6 transfer to a mixing bowl, add yogurt and mash.
