Wholesome Lentil Soup

Total Time: 1 hr 5 mins Preparation Time: 20 mins Cook Time: 45 mins

Ingredients

  • Servings: 6
  • 1 1/2 teaspoons canola oil
  • 1 1/4 cups onions, chopped
  • 1 cup celery, chopped
  • 2 garlic cloves, minced
  • 8 cups chicken broth
  • 1 (28 ounce) can tomatoes, diced
  • 1 (10 ounce) can undiluted tomato soup
  • 2 cups lentils (washed)
  • 2 cups carrots, chopped
  • 2 cups yams or 2 cups sweet potatoes, peeled and diced
  • 1 1/2 teaspoons dried oregano
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 3/4 teaspoon ground coriander
  • 1/2 teaspoon black pepper
  • 1/8 teaspoon nutmeg
  • 2 cups packed fresh spinach, chopped

Recipe

  • 1 saute onions, celery and garlic in canola oil for 3 - 4 minutes.
  • 2 add remaining ingredients, except spinach. bring to a boil.
  • 3 reduce heat, cover and simmer for 30 min., stirring occasionally.
  • 4 add spinach and simmer for 15 minute serve hot.
  • 5 better the next day.
