Wild Rice - Quinoa Pilaf

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 8
  • 1 tablespoon canola oil
  • 1/3 cup onion, finely chopped
  • 1/3 cup celery, finely chopped
  • 1/4 cup pistachio nut
  • 1 cup quinoa, rinsed and drained
  • 3 cups vegetable broth
  • 1 cup cooked wild rice
  • salt and pepper

Recipe

  • 1 saute onion and celery in oil 5 to 6 minutes.
  • 2 stir in the nuts and quinoa and cook 1 to 2 minutes.
  • 3 add broth and bring to a boil.
  • 4 reduce heat to low, cover and simmer 18 to 20 minutes.
  • 5 stir in wild rice. cover and cook 2 to 3 minutes or until hot.
  • 6 add salt and pepper to taste.
