Wild Rice - Quinoa Pilaf

Ingredients
- Servings: 8
- 1 tablespoon canola oil
- 1/3 cup onion, finely chopped
- 1/3 cup celery, finely chopped
- 1/4 cup pistachio nut
- 1 cup quinoa, rinsed and drained
- 3 cups vegetable broth
- 1 cup cooked wild rice
- salt and pepper
Recipe
- 1 saute onion and celery in oil 5 to 6 minutes.
- 2 stir in the nuts and quinoa and cook 1 to 2 minutes.
- 3 add broth and bring to a boil.
- 4 reduce heat to low, cover and simmer 18 to 20 minutes.
- 5 stir in wild rice. cover and cook 2 to 3 minutes or until hot.
- 6 add salt and pepper to taste.
