Moist, Tender & Crispy Lamb Chops

Total Time: 35 mins Preparation Time: 20 mins Cook Time: 15 mins

Ingredients

  • Servings: 2
  • 1 lb boneless lamb chop, with fat trimmed off
  • 1/3 cup canola oil (for frying)
  • 1 egg
  • 1/2 teaspoon dijon mustard
  • 1/2 teaspoon mayonnaise
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon kosher salt
  • 1/8 teaspoon black pepper
  • 2 cups corn flakes
  • 1 tablespoon romano cheese or 1 tablespoon parmesan cheese

Recipe

  • 1 egg wash: beat the egg in a wide bowl with the mustard, mayonnaise, oregano, salt and pepper.
  • 2 coating: crush corn flakes and combine with the romano cheese.
  • 3 spread out on a large plate.
  • 4 chops: poke chops with a fork or pound with a mallet to tenderize.
  • 5 oil: heat oil in a large frying pan over medium heat (oil is hot enough when a small piece of bread sizzles when dropped into the oil).
  • 6 cook: press each of the chops into the egg mixture, coating both sides.
  • 7 then dip the chops into the bread crumbs, covering each side evenly.
  • 8 fry the chops until they are a deep golden color, about 5-8 minutes per side depending on thickness.
