Moist, Tender & Crispy Lamb Chops

Ingredients

- 1 lb boneless lamb chop, with fat trimmed off
- 1/3 cup canola oil (for frying)
- 1 egg
- 1/2 teaspoon dijon mustard
- 1/2 teaspoon mayonnaise
- 1/4 teaspoon dried oregano
- 1/4 teaspoon kosher salt
- 1/8 teaspoon black pepper
- 2 cups corn flakes
- 1 tablespoon romano cheese or 1 tablespoon parmesan cheese
Recipe
- 1 egg wash: beat the egg in a wide bowl with the mustard, mayonnaise, oregano, salt and pepper.
- 2 coating: crush corn flakes and combine with the romano cheese.
- 3 spread out on a large plate.
- 4 chops: poke chops with a fork or pound with a mallet to tenderize.
- 5 oil: heat oil in a large frying pan over medium heat (oil is hot enough when a small piece of bread sizzles when dropped into the oil).
- 6 cook: press each of the chops into the egg mixture, coating both sides.
- 7 then dip the chops into the bread crumbs, covering each side evenly.
- 8 fry the chops until they are a deep golden color, about 5-8 minutes per side depending on thickness.
