Oat Flour Pancakes

Total Time: 50 mins Preparation Time: 20 mins Cook Time: 30 mins

Ingredients

  • 1 1/2 cups oat flour
  • 1/2 cup flour
  • 1/2-1 cup rolled oats
  • 1 1/4 teaspoons baking powder
  • 3/4 teaspoon baking soda
  • 1 teaspoon salt
  • 2 tablespoons sugar
  • 2 large eggs
  • 2 cups buttermilk
  • 1/4 cup canola oil

Recipe

  • 1 in a large bowl mix the top 7 dry ingredients together.
  • 2 place the remaining 3 liquid ingredients in a four cup pyrex measuring cup and blend well.
  • 3 pour the liquid mixture into the dry mixture and mix with a whisk just until blended.
  • 4 do not overmix.
  • 5 heat a griddle to medium heat.
  • 6 spray with non-stick cooking spray.
  • 7 pour 3/4 a cup mix per pancake onto griddle.
  • 8 cook on medium heat for 1-3 minutes until bubbles form, flip and cook the other side for about a minute.
  • 9 top with your favorite toppings.
  • 10 enjoy!
