Oat Flour Pancakes

Ingredients
- 1 1/2 cups oat flour
- 1/2 cup flour
- 1/2-1 cup rolled oats
- 1 1/4 teaspoons baking powder
- 3/4 teaspoon baking soda
- 1 teaspoon salt
- 2 tablespoons sugar
- 2 large eggs
- 2 cups buttermilk
- 1/4 cup canola oil
Recipe
- 1 in a large bowl mix the top 7 dry ingredients together.
- 2 place the remaining 3 liquid ingredients in a four cup pyrex measuring cup and blend well.
- 3 pour the liquid mixture into the dry mixture and mix with a whisk just until blended.
- 4 do not overmix.
- 5 heat a griddle to medium heat.
- 6 spray with non-stick cooking spray.
- 7 pour 3/4 a cup mix per pancake onto griddle.
- 8 cook on medium heat for 1-3 minutes until bubbles form, flip and cook the other side for about a minute.
- 9 top with your favorite toppings.
- 10 enjoy!
