Ella Grasso's Quick Whole Wheat Bread

Total Time: 1 hr 5 mins Preparation Time: 15 mins Cook Time: 50 mins

Ingredients

  • 2 1/2 cups whole wheat flour
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 teaspoon baking soda
  • 1/4 cup egg substitute
  • 1/3 cup molasses
  • 1/4 cup brown sugar
  • 1/4 cup canola oil
  • 1 teaspoon lemon rind, grated
  • 1 cup plain fat-free yogurt

Recipe

  • 1 preheat oven to 375 degrees.
  • 2 mix the first four dry ingredients in a bowl.
  • 3 in a separate bowl, mix the egg, molasses, sugar, oil and grated lemon rind.
  • 4 add the egg mix to the dry ingredients alternately.
  • 5 mix in the yogurt.
  • 6 pour in butter 9 by 5 inch loaf pan.
  • 7 bake for 50 minutes.
