Sweet Potato Pancakes

Ingredients

- 1/3 cup soy flour
- 1/3 cup whole wheat pastry flour
- 2 teaspoons baking powder
- 2 eggs, lightly beaten
- 1 cup milk
- 3 tablespoons honey
- 2 medium sweet potatoes, unpeeled, scrubbed, grated
- 2 tablespoons canola oil or 2 tablespoons olive oil or 2 tablespoons peanut oil
Recipe
- 1 in a mixing bowl, combine the flours and baking powder.
- 2 in another bowl, or in the food processor, whisk together the eggs, milk, and honey. add the dry ingredients to the egg mix. blend only until batter is evenly moistened. fold in the sweet potatoes.
- 3 in a heavy nonstick skillet over medium heat, heat 1 tablespoons of the oil ladle 1/4 cup of batter into the skillet. with the back of the ladle, spread batte out to about 6 inches in diameter. cook for about 1 minute, then, using a spatula, turn and brown the other side. continue with remaining.
- 4 batter, adding more oil as needed to prevent sticking. serve immediately or.
