Spinach Salad With Garlic Dressing

Ingredients

• 5 cups spinach
• 1 medium onion, chopped
• 1/2 cup diced celery
• 4 hard-boiled eggs, chopped
• 1/4 teaspoon pepper
• 1 tablespoon capers
• 1 teaspoon salt
• 1/2 teaspoon pepper
• 1/4 teaspoon cayenne
• 1/4 teaspoon dry mustard
• 2 tablespoons vinegar (rice or regular)
• 1 tomato, pureed
• 1 dash tabasco sauce
• 1 cup canola oil
• 2 -5 cloves garlic, crushed

Recipe

• 1 ---------salad----------.
• 2 boil eggs and chop.
• 3 wash spinach well and dry, tear into small pieces.
• 4 in a large bowl combine spinach, onion, celery, eggs, salt and pepper.
• 5 chill well.
• 6 just before serving pour garlic dressing over salad and toss lightly.
• 7 garnish with capers.

• 9 combine all ingriedients and puree with moulinex or hand blender.
