Spanish Rice With Chicken

Ingredients
- Servings: 8
- 3 lbs boneless skinless chicken breasts, 1 inch slices
- 3 cups rice
- 16 ounces tomato sauce, cans
- 1 small onion, diced
- 2 garlic cloves, chopped
- 1 teaspoon cumin
- 1 teaspoon salt (or salt to taste)
- 3 tablespoons canola oil (or what ever you got on hand)
- 6 cups water
Recipe
- 1 at high heat add canola oil to a large pot.
- 2 add rice, onion, and garlic; brown.
- 3 bring to a medium heat.
- 4 carefully add tomato sauce and stir quickly until the sauce thickens.
- 5 pour in the 6 cups of water and stir.
- 6 add cumin and salt to taste.
- 7 add chicken and bring to a boil.
- 8 place a lid on pot an bring heat to a low heat.
- 9 simmer until rice is tender and chicken is cooked thoroughly.
- 10 serve with flour tortillas.
