Pilipit (glazed Rice Flour Twists)

Total Time: 45 mins Preparation Time: 30 mins Cook Time: 15 mins

Ingredients

  • 1 1/2 cups sticky rice (mochiko rice, reserve the 1/2 cup)
  • 1 cup unsweetened flaked coconut
  • 1 cup brown sugar
  • 2 cups canola oil
  • 1/2 cup water

Recipe

  • 1 to make the dough: mix in mochiko rice and coconut flakes.
  • 2 add water little by little until you can form the dough into small balls.
  • 3 dust the board with rice flour to prevent the dough from sticking.
  • 4 pull each ball to form an 8 inch cylinder dough.
  • 5 twist the dough into a number 8. or like a pretzel.
  • 6 to make the caramel syrup:in the mean time while the dough is frying, melt the brown sugar in 1 cup of oil.
  • 7 lower heat until it reaches the caramel syrup stage.
  • 8 dip each dough twist to coat with the syrup.
  • 9 serve hot and enjoy.
