Pilipit (glazed Rice Flour Twists)

Ingredients
- 1 1/2 cups sticky rice (mochiko rice, reserve the 1/2 cup)
- 1 cup unsweetened flaked coconut
- 1 cup brown sugar
- 2 cups canola oil
- 1/2 cup water
Recipe
- 1 to make the dough: mix in mochiko rice and coconut flakes.
- 2 add water little by little until you can form the dough into small balls.
- 3 dust the board with rice flour to prevent the dough from sticking.
- 4 pull each ball to form an 8 inch cylinder dough.
- 5 twist the dough into a number 8. or like a pretzel.
- 6 to make the caramel syrup:in the mean time while the dough is frying, melt the brown sugar in 1 cup of oil.
- 7 lower heat until it reaches the caramel syrup stage.
- 8 dip each dough twist to coat with the syrup.
- 9 serve hot and enjoy.
