Pilaf-style Basmati Rice

Ingredients
- Servings: 4
- 1 tablespoon canola oil or 1 tablespoon vegetable oil or 1 tablespoon corn oil
- 3 inches piece cinnamon sticks, halved
- 2 green cardamom pods
- 2 whole cloves
- 1/4 cup thinly sliced onion
- 1 cup basmati rice
- 1 teaspoon table salt
- 1 1/2 cups water
Recipe
- 1 heat oil in a medium saucepan until almost smoking. add whole spices and cook until they pop. add onions and cook until translucent, stirring frequently, about 2 minutes. add rice and stir about 1 minute, until a nutty smell develops.
- 2 add salt and water. bring to a boil, reduce heat to a simmer, cover tightly and cook until water has all been absorbed, about 17 minutes. let stand, covered, another 10 minutes. fluff with fork and serve.
