Lamb Chops With Apples And Onion

Ingredients

  • Servings: 4
  • 4 boneless lamb loin chops
  • 1/4 teaspoon dried thyme, crushed
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 teaspoon canola oil
  • 2 medium apples, thinly sliced
  • 1 medium onion, sliced
  • 2 tablespoons brown sugar
  • 2 teaspoons cider vinegar

Recipe

  • 1 sprinkle lamb chops with thyme, salt and pepper.
  • 2 heat oil in large nonstick skillet over medium high heat.
  • 3 add lamb chops; cover and cook 3 minutes.
  • 4 turn chops; cover and cook an additional 3 to 5 minutes or until lamb is no longer pink in center.
  • 5 remove chops from skillet; cover to keep warm.
  • 6 add apples, onion and brown sugar to same skillet; mix well.
  • 7 cover; cook over medium high heat for 5 minutes, stirring once.
  • 8 add vinegar.
  • 9 cook, uncovered, 3 to 6 minutes or until apples and onion are crisp tender and light golden brown, stir occasionally.
  • 10 serve apples over lamb chops.
