Honey Glazed Plantains

Ingredients

- canola oil, enough to coat the bottom of the pan
- 1 ripe plantain
- 4 ounces butter
- 1/4 cup scallion, finely chopped
- 1/4 cup honey
- 1/4 cup parsley, finely chopped
Recipe
- 1 preheat a medium frying pan and coat with canola oil.
- 2 slice plantains on the bias, then saute until brown.
- 3 mix in butter and scallions until butter is melted and scallions are softened.
- 4 remove from heat, and stir in honey and parsley.
