Honey Glazed Plantains

Total Time: 25 mins Preparation Time: 5 mins Cook Time: 20 mins

Ingredients

  • Servings: 2
  • canola oil, enough to coat the bottom of the pan
  • 1 ripe plantain
  • 4 ounces butter
  • 1/4 cup scallion, finely chopped
  • 1/4 cup honey
  • 1/4 cup parsley, finely chopped

Recipe

  • 1 preheat a medium frying pan and coat with canola oil.
  • 2 slice plantains on the bias, then saute until brown.
  • 3 mix in butter and scallions until butter is melted and scallions are softened.
  • 4 remove from heat, and stir in honey and parsley.
