German Home Fried Potatoes

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 12 red potatoes, small
  • 1 red onion, cut in julienne
  • 1 garlic clove, crushed
  • 2 tablespoons canola oil
  • 2 tablespoons olive oil
  • 2 tablespoons chives or 2 tablespoons parsley, chopped
  • salt and pepper

Recipe

  • 1 cook potatoes in their jackets, until done.
  • 2 cool slightly and peel.
  • 3 cut into thin slices while still warm.
  • 4 in a non-stick skillet, add a mixture of canola oil and olive oil- just enough to coat the bottom of pan.
  • 5 heat oil and add potato slices and onion.
  • 6 season with salt and pepper.
  • 7 saute until golden brown.
  • 8 sprinkle liberally with chopped chives or parsley.
