French Canadian Sweet Potato Poutine

Total Time: 30 mins Preparation Time: 5 mins Cook Time: 25 mins

Ingredients

  • Servings: 1
  • 1 large sweet potato
  • 2 tablespoons canola oil
  • salt and pepper
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 2 cups beef stock
  • 1/4 cup shredded light mozzarella cheese

Recipe

  • 1 slice sweet potato into 1/4in thick french fry slices.
  • 2 toss with canola oil, sprinkle with salt and pepper.
  • 3 arrange in single layer on a cookie sheet.
  • 4 bake at 425f for 20-25 minutes.
  • 5 meanwhile, heat butter and flour over medium heat in a saucepan.
  • 6 add beef stock, whisk well, lower heat and cook for 10-15 minutes or until thickened (you can also use a can of pre-made gravy).
  • 7 when sweet potato fries are done, arrange them on a plate, layer with cheese, and smother with gravy
  • 8 enjoy.
