French Canadian Sweet Potato Poutine

Ingredients

- 1 large sweet potato
- 2 tablespoons canola oil
- salt and pepper
- 2 tablespoons butter
- 2 tablespoons flour
- 2 cups beef stock
- 1/4 cup shredded light mozzarella cheese
Recipe
- 1 slice sweet potato into 1/4in thick french fry slices.
- 2 toss with canola oil, sprinkle with salt and pepper.
- 3 arrange in single layer on a cookie sheet.
- 4 bake at 425f for 20-25 minutes.
- 5 meanwhile, heat butter and flour over medium heat in a saucepan.
- 6 add beef stock, whisk well, lower heat and cook for 10-15 minutes or until thickened (you can also use a can of pre-made gravy).
- 7 when sweet potato fries are done, arrange them on a plate, layer with cheese, and smother with gravy
- 8 enjoy.
