Best Bran Muffins (vegan)

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • 1 tablespoon vinegar
  • 1 1/2 cups soymilk or 1 1/2 cups non-dairy milk substitute
  • 1 cup whole wheat flour (pastry flour is best)
  • 1 1/2 cups wheat bran
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup raisins (optional) or 1/2 cup dates (optional)
  • 3 tablespoons canola oil
  • 2 tablespoons brown sugar
  • 2 tablespoons molasses
  • 1 teaspoon vegan egg replacer powder
  • 2 tablespoons water

Recipe

  • 1 mix together vinegar and milk and let sit while you prepare the rest of the ingredients.
  • 2 in a large bowl, whisk flour, bran, soda and salt together. stir in raisins or dates, if using.
  • 3 mix together oil, brown sugar, molasses, egg replacer and water. add the vinegar and milk mixture.
  • 4 stir liquid ingredients into dry just until mixed.
  • 5 spoon into 12 muffin tins.
  • 6 bake at 375 f for 15-20 minutes, or until toothpick inserted into centre comes out dry.
