Madras Chicken

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 4 boneless chicken breast halves
  • 1 tablespoon canola oil
  • 1 small onion, thinly sliced
  • 14 ounces apricot halves with juice
  • 2 teaspoons curry powder
  • 1/3 cup mango chutney

Recipe

  • 1 saute chicken until slightly golden - about 3 minutes per side.
  • 2 remove from pan.
  • 3 add onion and curry and saute a couple of minutes.
  • 4 return chicken to pan.
  • 5 add fruit, juice and chutney.
  • 6 simmer 10 minutes.
  • 7 enjoy.
